The fauna of these majestic Mountains counts various bird species: golden eagle, red kite, tawny owl, eagle owl, great spotted woodpicker, hoopoe, pheasant and many other. As mammals we want to remember the badger who might be difficult to meet as he is nocturnal, fox, least weasel and beech marten, roe deer, chamois who dominates from the highest peaks, and marmot, almost the symbol of Mount Baldo, whom you might meet easily in the evening, and many other kinds of animals.
The most typical and widespread occupation between 1400 and 1800 MASL is milk dairy and sheep farming. There a many seasonal mountain pastures, most of them quite small, who process on their own the collected milk, transforming it into delicious cream cheeses or cheeses with an intermediate maturation.
Often you may find pig farming. They deliver, feeded with whey and other fruits of the earth, an excellent pork that allows to manufacture few but peerless salami.
Mountain pastures hiking is an extremely stimulating way to pass a day at Monte Baldo and to enjoy the few simple but delicious specialties of a gastronomy poor in terms of ingredients but rich in terms of ancient flavours and increasingly appreciated by modern people.
